Coconut Crusted Laksa Prawns

Ingredients: 

Ingredients 175ml   Yoghurt, natural 175g    KNORR Blue Dragon Laksa Paste 1kg       Shellfish, prawns (raw) (30) 150g    Fruit, coconut dessicated 30pc    Skewers Sauce 175g    KNORR Blue Dragon Laksa Paste 800ml    Milk, Coconut (canned)

Preparation: 

Advanced Preparation Prepare ingredients as above. Soak skewers. Pre-heat BBQ or Grill. Method 1. In a suitable bowl mix together the yoghurt and laksa paste. Add the prawns and mix well, cover, label and refrigerate until required minimum of 2 hours. 2. Thread the prawns on the skewers and then roll the prawns through the coconut. 3. In a suitable pan mix together the laksa paste and coconut milk place over a medium heat and simmer until reduced by 1/3rd. 4. Place the prawns onto a suitable tray and place under the grill cook for 2 minutes on both side or until the prawns are thoroughly cooked. 5. Serve the cooked prawns centre of plate with a dip pot of the sauce. Service Hint Serve with a crispy salad garnish and some crusty bread.
